they are crisp on the outside, chewy on the inside, and are a great holiday treat! Ingredients:
2 tablespoons cocoa powder |
1/2 cup sugar |
2 large egg whites (or 1 cup egg product) |
1/4 teaspoon cream of tartar |
1 pinch salt |
1/2 teaspoon peppermint extract |
Directions:
1. Preheat oven to 250 degrees. 2. line two baking sheets with parchment paper. 3. in a small bowl, sift together the cocoa powder and sugar. 4. in a large bowl, beat egg whites cream of tartar and salt with an electric mixer until soft peaks form. 5. add the cocoa mixture one at a time, mixing between addittions. 6. add pepperment extract and mix well. 7. drop by rounde tablespoonsonto baking sheets. 8. place in oven for one hour. 9. turn off oven and leave door slightly open. 10. leave cookies for at least 2 hours or overnight. 11. store in airtight container. |
