Fat Free Cauliflower Salad (Sub. for Potato Salad) |

I found one recipe on here for a great cauliflower salad. I tweaked it to my liking and here is the end result. Not exactly like potato salad-but close enough when it is a healthier version! Ingredients:
1 whole cauliflower, steamed and florets chopped into chunks |
2 slices bacon, cooked crisp and crumbled |
4 -5 scallions, chopped |
1/2 cup finely diced celery |
1/3 cup fat-free miracle whip |
1/3 cup fat free sour cream |
4 tablespoons dijon mustard |
1/2 teaspoon kosher salt |
1/4 teaspoon black pepper |
1/4 teaspoon paprika |
Directions:
1. mix all ingredients in a large bowl and chill for at least three hours before serving! Enjoy! prep and cooking time do not include chilling time. |
