It was actually by fluke that I found this recipe. I was looking for recipes to use up yogurt! Ingredients:
1 1/4 cups whole wheat flour |
3/4 cup all-bran cereal |
1/3 cup brown sugar |
1 teaspoon baking soda |
2 teaspoons baking powder |
1 cup plain fat-free yogurt |
2 eggs, slightly beaten |
1 teaspoon vanilla |
3/4 cup blueberries (fresh or frozen) |
Directions:
1. In a bowl, combine the flour, All Bran cereal, brown sugar, baking soda, baking powder. 2. In a another bowl, combine the yogurt, eggs, vanilla and blueberries. 3. Combine the dry ingredients with the wet and place in muffin tins. 4. Bake in a 350 oven for 16 - 18 minutes or until done. |
