This is a slam dunk fast recipe with steamed rice & a microwaved vegie - on the table in under 30 minutes, start to finish. From the Miami Herald hailing from Linda Gassenheimer's Dinner in Minutes . Ingredients:
1 lb skinless chicken thigh, with bone |
1/2 tablespoon garlic, minced |
3/4 cup sherry wine (medium or dry) |
salt |
black pepper, freshly ground |
Directions:
1. Heat a nonstick skillet over medium-high heat. 2. Spray with olive oil and add chicken. 3. Brown 2 minutes, turn, add garlic and brown second side 1 minute. 4. Lower heat to medium and add sherry. 5. Cover with a lid and simmer 5 minutes or until a meat thermometer reads 180 degrees. 6. Sprinkle with salt and pepper to taste. |
