2 tablespoons vegetable oil |
1 shallot, chopped |
2 garlic cloves, minced |
2 stalks celery, diced |
1/2 lb mushroom, thinly sliced |
1 red bell pepper, diced |
1 tablespoon chopped fresh tarragon or 1 tablespoon italian parsley |
1/4 teaspoon fine salt |
2 cups whole milk |
2 cups fish stock or 2 cups chicken stock |
1/2 lb raw shrimp, peeled deveined and chopped |
6 ounces bay scallops |
1 (5 ounce) can baby clams, rinsed and drained |
Directions:
1. In a soup pot, heat oil over medium flame until shimmering. Add shallot, garlic, celery, mushrooms, bell pepper, tarragon and salt. Saute until vegetables release their water and most of it has evaporated, about 10 minutes. 2. Add milk and stock and bring to a gentle boil. Add shrimp, scallops, and clams. Simmer about 5 minutes, until scallops are opaque and firm. |
