From Pacific Fresh cookbook, an easy sauce for busy days. I've used it when making manicotti and of course, over plain pasta. Ingredients:
1 tablespoon olive oil |
1 cup chopped yellow onion |
1 clove garlic, minced |
1 (15 ounce) can diced tomatoes, pureed slightly |
1 (8 ounce) can tomato sauce |
1/2 teaspoon dried basil, crumbled |
1/4 teaspoon dried oregano, crumbled |
1 bay leaf |
1/4 teaspoon sugar |
1/4 teaspoon salt |
fresh ground pepper |
Directions:
1. In saucepan over medium heat, warm oil. 2. Add onion and garlic; saute until soft. 3. Add pureed tomatoes, tomato sauce, herbs, sugar, salt, and pepper. 4. Simmer, uncovered, stirring occasionally 10- 15 minutes. |
