this is a cake that's good with afternoon tea or coffee break or if someone drops in... Ingredients:
1 box (18-ounce) lemon cake mix |
1/2 cup sweetened condensed milk |
1/3 cup vegetable oil |
1/4 cup water |
2 eggs |
1 1/2 cups golden raisins |
1 1/2 cups chopped pecans |
Directions:
1. preheat oven to 325' F 2. in a large bowl...beat cake mix, sweetened condensed milk, oil, water, and eggs at low speed until just moistened 3. beat at high speed for 2 minutes. 4. stir in raisins and pecans 5. spoon the batter into 3 greased and floured 3 3/4 - 7 1/2-inch loaf pans 6. bake 50 -60 minutes or until a toothpick inserted in the middle comes out with a few crumbs attached 7. cool in pans for 10 minutes 8. remove from pans and cool completely on wire rack. 9. to store wrap well in plastic wrap |
