Many fast food joints and delis sell coleslaw, but it's usually loaded with mayo (fat) and lots of sugars. This is a way to redeem it into something palatable AND healthy.
Ingredients:
1 qt fast food, deli, or other prepared coleslaw
sieve
bowl whose lip fits the sieve
2 limes, juiced (include the pulp)
choose one or more: chili powder, creole seasoning, soul-food seasoning, or other spicy mixture
Directions:
1. Invert the container of coleslaw over the sieve, which should be over the bowl.
2. Allow to drain 20 minutes.
3. Press the coleslaw with a large spoon to remove all of the remaining liquid possible. I sometimes even rinse it in cold water, then re-drain.
4. Put the drained coleslaw into a serving bowl and toss with the lime juice and pulp, then season to your taste.
