Fast-Fix Fried Rice

This recipe from BBC Good Food is very tasty and a great way to use up leftovers!
Ingredients:
1 teaspoon vegetable oil
1 egg, beaten
2 slices bacon, chopped
175 g mixed mushrooms, sliced
200 g frozen peas
1 garlic clove, crushed
1 tablespoon ginger, grated
2 teaspoons dark soy sauce
1 teaspoon granulated sugar
250 g cooked basmati rice
Directions:
1. Heat the oil in a frying pan, then tip in the egg.
2. Leave to set for 30 seconds to 1 minute, swirling every now and again, then tip it out and finely slice.
3. Add the bacon and mushrooms to the pan, then fry until golden, about 3 minutes.
4. Add the peas, garlic and ginger, then cook for 1 minute.
5. Mix the soy sauce and sugar together.
6. Turn up the heat, add the cooked rice to the pan, heat through, then splash in the sweet soy sauce.
7. Stir through the egg and serve straight away, with additional soy sauce on the side.
