Ready, Set, Cook! Special Edition Contest Entry: A cheesy potato casserole for brunch, lunch or dinner. comfort food at its tastiest! Ingredients:
8 large eggs |
2 tablespoons chicken broth |
salt and pepper |
1 (20 ounce) package simply potatoes diced potatoes with onion |
1 1/2 cups bacon pieces, cooked diced drained |
3 cups grated sharp cheddar cheese |
1 cup diced sun-dried tomato |
salt and pepper |
Directions:
1. Mix eggs, broth, , salt and pepper together. 2. Put potatoes and onion, evenly over bottom of a greased casserole. 3. Layer bacon and sun dried tomatoes. Pour beaten egg mixture over potatoes. 4. Spread cheese over top. Cover with foil and bake at 350° F for 30 minutes. 5. Remove foil and bake an additional 15 minutes until golden brown. 6. Let set 10 minutes after baking before cutting and serving. |
