1/4 cup vegetable oil |
2 tablespoons lemon juice |
1 cup grated parmesan cheese |
1/2 cup biscuit mix |
1/4 teaspoon pepper |
3 boneless skinless chicken breasts, halved and flattened |
2 tablespoons margarine |
Directions:
1. Mix together vegetable oil and lemon juice in small bowl. 2. Mix cheese, biscuit mix, and pepper in a shallow small bowl. 3. Dip chicken into oil mixture, then coat with cheese mixture. 4. Heat margarine in large skillet over medium heat until hot. 5. Saute chicken until golden and done (2-3 minutes on each side). 6. Serve with a squeeze of lemon, spaghetti sauce, or Parmesan cheese. |
