Fast and Healthy - Orange Corn Bread |

From Simple and Delicious Jan 2009 magazine. Posting for safe keeping - I've not made this yet. The description says it has a mild orange flavor. Ingredients:
1 cup all-purpose flour |
1 cup cornmeal |
1/3 cup sugar |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 cup nonfat milk |
1/2 cup egg substitute |
1/4 cup orange juice |
2 tablespoons canola oil |
Directions:
1. In a large bowl, combine the flour, cornmeal, sugar, baking powder, baking soda, and salt. 2. In a small bowl, combine the milk, egg, orange juice and oil. 3. Stir wet ingredients into dry ingredients just until combined (batter will be thin). 4. Pour into a greased 9-inch square baking pan. 5. Bake at 400F for 18-22 minutes or until it passes the toothpick test. |
