Fast And Fabulous Chunky Chicken Salad With Macada...

This is a great chicken salad that's easy to throw together in a hurry using a roasted chicken from the grocery deli. (Great with leftover, or your own cooked chicken as well).
Ingredients:
1 roasted chicken from deli (plain, rotisserie flavor)
1 c chopped macadamia nuts
8 oz sour cream
1 c kraft or dukes real mayo
4 c roasted chicken, chopped
1 bunch scallions (for 1 c chopped, white and green parts)
2 large ribs clery, chopped
1/3 c sweet pickle relish (or cubes)
salt and pepper
Directions:
1. Spread nuts in a single layer on a microwave safe palte, and cook uncovered, on high, until fragrant and lightly toasted, about 2 minutes, stirring halfway through and watching closely to prevent burning.
2. Set aside to cool
3. In a medium bowl, mis together the sourcream and mayo
4. Remove chicken from boen and chop into chunks
5. Add to mayo mixture
6. Stir until well coated
7. Rinse and chop scallions and sprinkle over chicken mixture
8. Repeat with celery
9. Drain sweet pickle relish well and add to the salad
10. Add roasted nuts, salt and pepper
11. Stir to mix well
