This classic Greek green bean side is traditionally served at room temperature. It's great for barbecues or with sandwiches. Ingredients:
2 tablespoons olive oil |
1 cup finely chopped onion |
1/3 cup finely chopped fresh parsley |
1 tablespoon finely chopped fresh mint |
1 tablespoon finely chopped fresh or 1 teaspoon dried dill |
2 garlic cloves, minced |
2 pounds green beans, trimmed |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
2 (14.5-ounce) cans stewed tomatoes, undrained |
Directions:
1. Heat oil in a stockpot over medium-high heat. Add onion; sauté 3 minutes. Add herbs and garlic; sauté 4 minutes. Add beans and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 30 minutes or until beans are tender. |
