Farro is a grain used for thousands of years in Italy and is now finding its way back to the kitchen It is healthy and has a wonderful taste – it can be bought at “ Market hall foods .com “ they also have farro recipties Ingredients:
sea salt |
1 cup farro |
4 to 6 artichokes hearts from a jar |
3 medium vine-ripened red tomatoes, seeded and diced |
5 tablespoons extra-virgin olive oil |
2 tablespoon finely chopped flat-leaf parsley leaves plus whole |
leaves for garnish |
freshly ground black pepper |
10 slices of shaved parmagano cheese |
field greens |
Directions:
1. Bring a large pot of salted water to boil. Add farro and cook until al dente, about 18 minutes. Drain and spread on a large plate to cool for about an hour 2. Put farro in a large bowl; stir in tomatoes, artichokes 3 tablespoons oil and parsley. Season with salt and pepper. Divide among serving plates.with field greens as a bed 3. Top with cheese. |
