This is a great blend of flavours that uses an ancient grain, Farro, as its main ingredient. You can mix and match whatever veggies are in the fridge. Ingredients:
1 pound of farro |
1/4 cup of olive oil |
2 tbsp of red wine |
chopped fresh herbs eg basil |
sliced cucmumbers |
sliced black olives |
slivers of red onions |
capers |
roughly chopped arugula |
minced garlic |
chopped tomatoes |
Directions:
1. Cover the farro with cold water and let sit for 30-60 minutes. 2. Drain and place in pot with 2 quarts of stock or water. 3. Bring to boil uncovered, turn down to simmer and cook uncovered for 30 minutes. 4. Drain and toss with 1/4 cup of olive oil and 2 Tbsp of red wine vinegar. Season with salt and pepper. 5. Add the veggies, stir well and serve. |
