This layered casserole has a little less bread than a traditional strata. We used whole wheat bread, which increased the fiber content and decreased the carbo rating. Ingredients:
8 ounces turkey italian sausage |
2 cups egg substitute |
1 cup fat-free milk |
1/2 cup (2 ounces) shredded reduced-fat cheddar cheese |
1/2 teaspoon dry mustard |
1/4 teaspoon dried rubbed sage |
dash of salt |
dash of ground red pepper |
1/4 cup chopped green onions |
6 (1-ounce) slices whole wheat bread, cut into 1/2-inch cubes |

Directions:
1. Cook sausage in a nonstick skillet over medium-high heat until browned, stirring to crumble. 2. Combine egg substitute and next 6 ingredients in a medium bowl; stir well with a whisk. Stir in sausage, green onions, and bread cubes. Pour mixture into an 11 x 7-inch baking dish coated with cooking spray; cover and chill at least 8 hours. 3. Preheat oven to 350°. 4. Bake, uncovered, at 350° for 45 minutes or until set and lightly browned. Cut into 6 squares. 5. carbo rating: 15 |
