This is a old recipe again from my neighbour this lemon curd has been used on toast, in pies and lemon meringue and little tarts. very versatile!
Ingredients:
5oz butter 12oz caster sugar
3 1/2 lemons juice and rind
3 beaten eggs + 2 yolks
Directions:
1. Melt the butter, 12oz of sugar, juice and lemon grated rind in the top of a double saucepan over boiling water
2. Add the beaten eggs +2 yolks
3. Stir until thick
4. Cool
