Farmhouse Cheddar Muffins

Yummy with soups and chowders! Especially after playing in the snow or on cold rainy days!
Ingredients:
1/2 cup onion
2 tablespoons butter
2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon paprika
2 tablespoons sugar
1 egg, beaten
1/2 cup milk
1/2 cup sour cream
1/3 cup butter, melted
1 cup cheddar cheese, shredded
1/4 cup fresh parsley or 1 -2 teaspoon dill weed
Directions:
1. Saute the onion in the 2 tbsp butter.
2. Stir together flour, baking powder, salt, paprika and sugar.
3. Add egg, milk, sour cream, 1/3 c melted butter and cheese. Stir just until blended.
4. Fold in onions and parsley or dill weed. Bake at 400 degrees in greased muffin tin for about 20 minutes or until golden.
