Farmers' Market Squash Saute |

From Kraft magazine. Ingredients:
2 zucchini, sliced |
2 yellow squash, sliced |
2 garlic cloves, minced |
1 tablespoon olive oil |
1/2 cup low-moisture part-skim mozzarella cheese |
2 tablespoons fresh basil, chopped |
2 tablespoons parmesan cheese, grated |
Directions:
1. Cook zucchini and squash in hot oil in large skillet on medium heat 3 minutes, stirring occasionally. 2. Add garlic; cook 3 minutes or until vegetables are crisp-tender. 3. Remove from heat; stir in mozzarella and basil. 4. Sprinkle with parmesan. 5. Makes 4 servings of 3/4 cup each. |
