Farmers' Market Pasta with Clam Sauce |

Ingredients:
2 can(s) 6.5 oz. chopped clams, undrained |
1/2 cup(s) chopped fresh parsley |
1/2 cup(s) chopped red bell pepper |
2 cup(s) chopped tomato |
1/4 teaspoon(s) crushed red pepper |
8 ounce(s) linguini |
1/2 cup(s) minced carrot |
1/2 cup(s) minced onion |
1 tablespoon(s) olive oil |
1/2 teaspoon(s) pepper |
1/4 teaspoon(s) salt |
Directions:
1. Drain clams, reserving 1 cup clam juice. Set clams aside. 2. Heat olive oil in a large nonstick skillet over medium-high heat until hot. Add minced onion, carrot and garlic, and saute 3 minutes. Add reserved clam juice, tomato, bell pepper, salt and peppers, and bring to a boil. Reduce heat and simmer 20 minutes, or until slightly thick. Remove from heat and stir in clams and parsley. Serve clam sauce over a bed of pasta. |
