Farmer's Market Corn Toss

Ingredients:
1 tablespoon extra virgin olive oil
1 sweet onion, chopped
1 red pepper, chopped
2 ears corn on the cob, kernels cut off
1 large zucchini, sliced
1/4 cup chopped fresh parsley
1/4 teaspoon black pepper
4 tablespoons grated parmesan cheese, divided
Directions:
1. Saute onions and peppers in oil.
2. add everything but cheese and cook about 15 minutes.
3. toss with cheese at end.
