This recipe came to me Via Cafemom newsletter Ingredients:
1 tablespoon extra virgin olive oil |
1 sweet onion, chopped |
1 red pepper, chopped |
2 ears corn on the cob, kernels cut off |
1 large zucchini, sliced |
1/4 cup chopped fresh parsley |
1/4 teaspoon black pepper |
4 tablespoons grated parmesan cheese, divided |
Directions:
1. Saute onions and peppers in oil. 2. add everything but cheese and cook about 15 minutes. 3. toss with cheese at end. |
