mmmm. Ingredients:
2 tablespoons olive oil |
2 potatoes, diced into 1 cm chunks |
2 slices bacon, diced |
6 eggs |
3 tablespoons chopped parsley |
1 teaspoon butter |
salt and pepper |
Directions:
1. Heat oil in heavy pan. 2. Add potatoes and bacon. 3. Cook over a medium heat 5- 7 minutes until potatoes are tender. 4. Drain well on paper towel. 5. Lightly beat eggs in a large bowl. 6. Add salt and pepper. 7. Mix in the parsley. 8. Tip the potato mixture into the eggs and mix well to combine. 9. Melt a butter in a frypan, pour in the mixture and cook over a low heat until nearly set. 10. Place under a pre-heated grill and cook the top of the omelette until golden and set. |
