Mmmmm....hash browns, ham and eggs; just like down on the farm, but you only need one pan! This needs to chill overnight, so plan ahead. Prep. time does not reflect refrigeration time. Ingredients:
24 ounces frozen hash brown potatoes |
8 eggs, beaten |
1 cup milk |
1 1/2 cups ham, cut up into 1 inch pieces |
8 ounces shredded cheddar cheese |
1/2 cup onion, chopped |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. In a 9 x 13 greased baking pan, layer potatoes, ham, onion and cheese. 2. In a medium bowl, beat eggs; add milk, salt and pepper to eggs; beat well until thoroughly incorporated. 3. Pour over potato/ham layers. 4. Cover and refrigerate overnight. 5. To prepare: Preheat oven to 350 degrees; remove cover and bake for approximately 60 minutes. |
