Not for dainty appetites Ingredients:
6 slices bacon |
1/4 cup chopped green onion |
1/4 cup chopped green pepper |
1 tablespoon flour |
1 tablespoon sugar |
1/2 teaspoon celery seeds |
1/4 teaspoon salt |
dash pepper |
1/2 cup water |
1/4 cup vinegar |
2 cups cubed cooked potatoes |
8(oz) fully cooked smoked bratwurst,cut in 1/2 pieces(about 2 cups) |
1/4 cup chopped pimiento |
2 tablespoons butter |
8 eggs,beaten |
1/3 cup milk |
1/2 teaspoon salt |
dash pepper |
Directions:
1. In large skillet cook bacon until crisp. 2. Remove bacon and drain on paper towel. 3. Reserve 3 Tablespoons drippings in skillet. 4. Crumble bacon and set aside. 5. Cook the green onion,and green pepper in reserved dripping until tender. 6. Blend in flour,sugar,celery seeds,1/4 teaspoon salt and dash of pepper. 7. Stir in water and vinegar. 8. Stir constantly over medium-high heat until mixture thickens and bubbles. 9. Fold in potatoes,bratwurst and pimiento. 10. Heat until bubbly. 11. Reduce heat and keep hot while scrambling eggs. 12. In a large skillet,melt the 2 tablespoons of butter. 13. Mix eggs with milk,1/2 teaspoon salt and dash of pepper. 14. Add to melted butter in skillet and cook thoughout but still glossy and moist. 15. Remove from skillet and place on a heated platter. 16. Top with hot potato mixture. 17. Garnish with crumbled bacon. 18. Makes 6 to 8 servings |
