Farina With Cheese

A perfect cold winter breakfast or dessert.
Ingredients:
11/2 c milk
3/4 c sugar
4t unsalted butter
11/4 c farina(regular cream of wheat)
1 c grated mozzarella cheese
Directions:
1. Bring 1 cup water, milk, and sugar to a boil, stir to dissolve. Boil 10 minutes, set aside.
2. Melt butter in a medium-size saucepan over medium-heat. Stir in cream of wheat, lightly brown, stirring constantlly.
3. Pour sugar-milk syrup into saucepan, stirring constantly till mixture boils, and liquids are absorbed. Remove from heat. Rest several minutes.
4. Quickly stir in cheese. Place in a serving platter and sprinkle with cinnamon. Serve immediately. This may be reheated in a non-stick pan, covered, over low heat stirring occasionally.
5. Variation: Roasted pine nuts may be sprinkled over it. Could decorate with halved walnuts all around edge of platter.
