6 tablespoons olive oil |
1/2 cup coarsely chopped onion |
1/4 cup sun-dried tomato, thinly sliced (packed in olive oil) |
1 clove garlic, minced |
8 ounces farfalle pasta |
1 (10 ounce) package frozen lima beans |
freshly ground black pepper |
Directions:
1. Heat oil in a medium skillet; add the onion and sauté until golden; stir in the tomatoes and garlic. Set aside. 2. Meanwhile cook the farfalle in plenty of boiling salted water, 3 minutes. 3. Add the lima beans and cook until both the pasta and lima beans are tender. Drain. 4. Toss the onions and pasta together and toss until blended. |
