Fantastic Open-faced Fried Egg Sandwich

This sandwich is a little something special for breakfast/brunch, and so easy & quick to make.
Ingredients:
1 slice whole grain bread, toasted
1-2 oz. garlic & herb chevre (goat) cheese, enough for a generous spread on toast
2 slices proscuitto, cooked crispy
1 egg
salt & pepper to taste
Directions:
1. Fry egg to your liking (I like mine over-medium w/yolk busted)
2. Spread cheese on toasted bread, top with egg, season with salt and pepper, then top with proscuitto. Cut in half if you desire & enjoy! Serve with fresh fruit (red grapes would go well).
