I had something similar to these at a wedding once. They didn't use store-bought pizza crust, of course, but I do. They were cut into fancy shapes, but squares are just as tasty! Ingredients:
1 12-inch boboli this pizza crust |
2 tablespoons extra-virgin olive oil |
1/2-3/4 pound fontina cheese, grated |
1 cup scallions or leeks, thinly sliced |
1 cup roma tomatoes, chopped |
2 teaspoons dried thyme (could probably also use oregano) |
kosher salt, to taste |
Directions:
1. Preheat oven to 425 degrees. 2. Place the pizza crust on a large pizza pan or baking sheet. 3. Spread crust evenly with olive oil. 4. Sprinkle with fontina cheese. 5. Sprinkle evenly with the scallions or leeks. 6. Sprinkle evenly with the tomatoes and thyme. 7. Season with salt and pepper. 8. Bake pizza until crust is golden and cheese is melted, 12-15 minutes. 9. Cool on pan for 5 minutes or else the cheese will run off when you try to cut it. 10. Cut into wedges, triangles, squares or just slice it like a pizza! The shape doesn't matter....they are good!!! |
