This lemony chicken is different than most. It is not shy about the use of lemon juice. Don't be afraid to try it, this is delish!!! Use some nice crusty bread to sop up the juices. You could also serve this over your favorite pasta. Read more . This comes from an Italian cookbook I bought a few years ago. The two cups of lemon juice put me off a little but decided to try anyway, I'm glad I did! Ingredients:
1 3lb. chicken halved |
1/4c. chopped parsley |
2c. fresh lemon juice |
1c. olive oil |
1t. red wine vinegar |
1/2 t. dries oregano |
2t. minced garlic |
salt and pepper to taste |
Directions:
1. Preheat broiler for 15min. 2. Broil chicken halves for 30 min. turning once or till juices run clear 3. Remove from broiler cut each half into 6 pcs. leg, wing, thigh, and cut breast into 3 pcs. 4. Place chicken in baking dish that can go under the broiler 5. Lemon Sauce 6. Whisk juice, oil, garlicolive oil, vinegar, oregano, salt and pepper 7. Pour sauce into a heavy sauce pan, stir in parsley 8. Boil one min. 9. Pour over chicken 10. Return to broiler for 3 min. 11. Serve 12. Soooo Good |
