Family Taco Casserole Recipe |

We did this one night and the name comes from the fact that each member of the family picked out an ingredient that he/she wanted to put in this casserole. We were running a risk of making a pot to flush down the garbage disposal...lol. But, it did turn out kind of good and we just made a salad to go with it. Everybody ate and there were no leftovers. Guess that means they all liked it. Ingredients:
1 (1/3 ounce) can cheddar cheese soup |
1 (10 3/4 ounce) can cream of onion soup |
1 (16 ounce) can hunt's diced tomatoes (mostly drained) |
1 lb ground beef (i use lean or extra lean) |
1 (1 1/4 ounce) taco seasoning |
1 (8 ounce) package grated sharp cheddar cheese |
1 (11 ounce) package nacho cheese flavor doritos, crushed |
1 (15 ounce) can corn, drained |
1 (15 ounce) can pinto beans, drained |
1 (4 ounce) can chopped green chilies, mild |
sour cream (to garnish) |
green onion (to garnish) |
3/4 cup sliced black olives |
Directions:
1. Brown meat and onion then drain. 2. Add seasoning mix, corn, green chilies and then stir 3. Mix soups and tomatoes together. 4. Grease a 9x13 pan. 5. Layer in this order: Doritos, pinto beans, meat mixture, olives,. 6. Pour soup/tomato mixture over top. 7. Sprinkle cheese over all and bake at 350 for 25-30 minutes. 8. Put a dollop of sour cream on each serving. |
