Family Style - Deep Dish Omelette |

My kids love omelettes. This ,of course, is a little more popular with the grown ups. Enjoy! Ingredients:
6 eggs |
1 cup shredded cheddar cheese |
1/2 teaspoon salt |
1/8 teaspoon cracked black pepper |
1 (10 ounce) package frozen chopped broccoli, thawed and drained |
1 small onion, chpped |
1/2 cup diced roasted red pepper |
non stick corn cooking spray (corn oil can be substituted with other type) |
Directions:
1. In large bowl, whisk together eggs, cheese,salt and pepper until blended;stir in broccoli, onion and roasted red peppers. 2. Coat 10-inch frying pan with cooking spray and heat over medium heat. 3. Add egg mixture. 4. Cover and cook 8 to 10 minutes until top is set. 5. Slide onto platter. |
