Family Favorite Vegetable Soup |

This soup is chock full of veggies! It is wonderful with a loaf of crusty French Bread on a cold winter day. It is a family favorite. If I have kale in my garden I chop about a cup and throw that in. If I don't have fresh zucchini, I add in zucchini that I have dried over the summer. Sometimes I will throw in a handful of lentils. Ingredients:
1/2 lb ground round |
2 quarts tomatoes |
4 cups water |
2 stalks celery, sliced |
1 onion, diced |
2 potatoes, peeled and diced |
2 carrots, sliced |
1 cup frozen corn |
1 cup frozen peas |
1 cup diced zucchini |
1/4 cup pearl barley |
3 tablespoons beef broth, powder |
1 teaspoon sugar |
Directions:
1. Brown meat in large soup pot; drain. Add tomatoes and water. Bring to boil; reduce heat to simmer. Cover and simmer until tomatoes are soft and juicy broth is created, about 10 minutes. Add the rest of the ingredients and simmer, covered 1 hour until the vegs. are tender and flavors blend. |
