iron/protein boost Ingredients:
15 oz chickpeas |
2 cloves garlic |
1/4 cup diced onion |
1/2 cup parsley |
1/2 tsp salt |
1/2 tsp ground cumin |
1/2 tsp red pepper flakes |
1/2 tsp epazote |
2 tablespoons lemon juice |
1 tsp baking powder |
3 1/2 tablespoons barley flour |
1 tablespoon canola oil |
Directions:
1. Put the chickpeas, garlic, onion, parsley, salt, cumin, red pepper flakes, mint, tahini and lemon juice into the bowl of a food processor and pulse until it forms a rough paste. Add the baking powder and flour and pulse until well combined. 2. Shape into 20 round pieces, roll in 1 tablespoon of oil. 3. Baked at 375 for 30 min, flipping midway. |
