Ingredients:
2 cups dried garbanzo beans |
1 small yellow onion |
1 bunch fresh mint |
1/2 bunch fresh cilantro |
3 garlic cloves |
1 egg |
1 slice bread |
2 teaspoons salt |
1 teaspoon ground black pepper |
2 teaspoons cumin |
1 lemon, juice of |
Directions:
1. Soak chickpeas overnght and drain 2 hours before cooking. This will allow them to air-dry a little bit. 2. Pulse all ingredients in a food processor until completely smooth. Work in batches if necessary. 3. Form into patties and fry in olive oil over medium heat for 3 mintues each side (or until golden brown). 4. Serve with pita bread, tzatziki, shredded lettuce and tomato. |
