Found this recipe and though others might like it. My daughter does not like pecans, or any nuts for that matter, but she likes the flavor of pecan pie. Ingredients:
3/4 cup crunchy nutlike cereal nuggets
1/2 cup warm water
3 eggs
3/4 cup sugar
1 cup dark corn syrup
3 tablespoons butter or regular margarine, melted
1 teaspoon vanilla
1/8 teaspoon salt
unbaked 9 pie shell
sweetened whipped cream
Directions:
1. Combine cereal and warm water in bowl.
2. Let stand until water is absorbed.
3. Beat together eggs and sugar in bowl until well blended, using an electric mixer at medium speed.
4. Beat in corn syrup, butter, vanilla and salt; blend well.
5. Stir in cereal mixture and pour into unbaked pie shell.
6. Bake in 350*F oven 50 minutes, or until filling is puffy.
7. Cool on rack.
8. To serve, top with puffs of sweetened whipped cream.
9. Makes 6 to 8 servings.
10. Note: You might try using a cereal like Post Grape-Nuts.
