A spicy BBQ bean chilli using fajita spices with a nacho cheese crust. Ingredients:
1 (14 ounce) can mexican style beans, drained (in water) |
low-fat cooking spray (sunflower) |
1 (14 ounce) can chopped tomatoes |
1 large green capsicum, cubed |
old el paso or discovery fajita seasoning mix |
1 small red onion, finely chopped |
3 medium garlic cloves, crushed |
red jalapeno (to taste, i use old el paso) |
1 dash tabasco sauce (optional) |
1 dash barbecue sauce |
1 pinch sea salt |
1 teaspoon fresh basil, chopped |
75 g nacho cheese flavored tortilla chips |
100 g reduced-fat cheddar cheese (grated) |
mild salsa (to serve) |
Directions:
1. Preheat an oven to 200 degrees centigrade (Gas mark 6). 2. Spray a frying pan with the cooking spray and heat slightly before adding onions, fry till soft. 3. Add peppers, garlic and jalapeno's, fry till starting to brown. 4. Add beans, tomatoes, tabasco, BBQ sauce and salt. Simmer for 3 minutes. 5. Place the mix in a casserole dish and cover with tortilla chips and cheese. 6. Bake for 12-15 minutes, Serve with salsa and remaining tortillas. |
