I perfected this typical cabbage diet soup to my liking. Easy to make and freeze leftovers if needed. Makes 1 big pot.
Ingredients:
4 carrots, sliced thin
2 zucchinis, halved and sliced
2 yellow squash, halved and sliced
2 green bell peppers, chopped
3 celery ribs, sliced
1 large onion, chopped
1 bag of shredded cabbage
2 tbsp. minced garlic
1 can beef broth
1 packet beefy onion soup
2 bay leaves
1 tbsp. garlic salt
1 large can & 1 small can diced tomatoes
1 can tomato soup & 1 can water
* i added water as well but didn't write it down. start with one cup and taste
Directions:
1. Combine first 6 ingredients in a large stew pot with cooking spray and saute about 5 minutes
2. Add remaining ingredients and simmer about 30 minutes.
3. Add salt and pepper to taste
4. *I like to sprinkle mine with a little Parmesan cheese*
