I perfected this typical cabbage diet soup to my liking. Easy to make and freeze leftovers if needed. Makes 1 big pot. Ingredients:
4 carrots, sliced thin |
2 zucchinis, halved and sliced |
2 yellow squash, halved and sliced |
2 green bell peppers, chopped |
3 celery ribs, sliced |
1 large onion, chopped |
1 bag of shredded cabbage |
2 tbsp. minced garlic |
1 can beef broth |
1 packet beefy onion soup |
2 bay leaves |
1 tbsp. garlic salt |
1 large can & 1 small can diced tomatoes |
1 can tomato soup & 1 can water |
* i added water as well but didn't write it down. start with one cup and taste |
Directions:
1. Combine first 6 ingredients in a large stew pot with cooking spray and saute about 5 minutes 2. Add remaining ingredients and simmer about 30 minutes. 3. Add salt and pepper to taste 4. *I like to sprinkle mine with a little Parmesan cheese* |
