Faiths Leftover Beef Stew |

Just 2 of us so always looking for ways to use the leftover cooked meat. Made this today with leftover London Broil and was fabulous ! Ingredients:
2 tbsp. oil |
1 c. baby carrots cut into 1/4's |
2 medium celery stalks sliced |
32 oz. carton beef broth |
1 pkt. dry onion soup mix |
2 c. water |
1 tsp. minced garlic |
1/2 tsp. pepper |
1-2 whole bay leaves |
1 large idaho potato peeled and diced |
1 14oz. can zucchini in tomato sauce (or 8 oz. can tom. sauce) |
1/2 to 3/4 lb. cooked beef steak/roast cubed |
2 tbsp. corn starch |
Directions:
1. -saute carrots and celery in oil in stockpot 5 min.'s 2. -add broth, onion soup mix, water, garlic, pepper and bay leaf. Bring to boil, turn to low and cover, simmer 10 min.'s 3. -Add diced potatoes, beef, and zucchini in sauce, bring back to boil and turn to low, cover and simmer 15 min's. or until potatoes are tender. 4. -mix together corn starch and 1/4 C. water. Add to soup and stir until thickened. |
