Faiths Cheesy Cauliflower Casserole |

This is delicious ! Great alternative to mac-n-cheese or scalloped potatoes. Kids and Hubbys will eat it :) Ingredients:
1 cauliflower head, broken to florets |
1-1/3 c. milk |
2-1/2 tbsp. flour |
3 tbsp. butter |
1/2 tsp. mustard powder |
1/8 tsp. nutmeg |
1/2 tsp. salt |
1/2 tsp. pepper |
8 oz. shredded cheddar (i prefer sharp) |
1/4 c. prepared breadcrumbs |
Directions:
1. Preheat oven to 425 2. boil cauliflower until just tender, about 10 min.'s 3. drain well and place into casserole sprayed with non-stick cooking spray 4. in a medium saucepan add the butter and melt, then add milk and whisk in flour 5. whisk over med-high heat until a boil, reduce heat and continue for 1 minute until smooth and thick 6. remove from heat and add mustard powder, nutmeg, salt, and pepper, stir 7. add 3/4 of the shredded cheese and blend well 8. pour sauce over cauliflower 9. mix breadcrumbs with remaining cheese and sprinkle on top 10. bake uncovered approx. 15 min.'s until brown and bubbly |
