This is a Southern Calebrese (Soveria-Simeri) variation of Pasta Fagiole Soup, only it's really a pasta dish with a flavorful tomato, bean, and onion sauce. Ingredients:
1 (14 ounce) can northern white beans, drained & rinsed |
1 white onion, diced |
1 garlic clove, minced |
1/4 cup extra virgin olive oil |
28 ounces tomato sauce |
1 (14 ounce) can chicken broth |
6 ounces ditali pasta |
Directions:
1. Sautee onion and garlic in olive oil until soft. Add beans, tomato sauce and broth. Simmer for 20-minutes, stirring frequently. Cook pasta and drain. Add beans and sauce and mix thoroughly. Serve right away. |
