Fabulous Mocha Fudge Pudding |

Of all the desserts at my friend's house while on vacation, this one was overwhelmingly the best if you crave rich, dense, smooth chocolate indulgences. Ingredients:
1/2 cup heavy cream |
2 tsp instant expresso |
6 oz bittewrsweet choclate chopped |
1/4 cup sugar |
1 fresh clean uncracked egg |
1 tsp pure vanilla extract |
pinch salt |
Directions:
1. Freeze 4 ramekins 2. Bring the cream and expresso powder to a boil in small sauce pan 3. Meanwhile in food processor combine chocolate and sugar and process finely ground 4. Add egg, vanilla and salt and pulse to a pste 5. With machine running, add hot cream in a steady stream and process until smooth and silky 6. Transfer to ramekins and freeze 20 minutes 7. Garnish with chocolate curls and whipped cream if desired 8. Note: the egg is necesarry for the texture of the pudding and do not omit |
