I love lamb and I love this stew! I came up with this recipe a few years ago. Every time I serve it I get oohs and awes! The extra effort is worth it. Ingredients:
12 cups water |
3 lbs lamb, stew bones with some meat on them |
2 large marrow, bones |
1 large onion, diced |
6 stalks celery, diced |
4 large garlic cloves, minced |
1 large potato, small cubes |
1 cup navy beans, soaked in water over night |
28 ounces tomato puree |
28 ounces whole canned tomatoes, cut in quarters |
1/3 cup canola oil |
salt and pepper |
Directions:
1. In a large pot place the 12 cups of water, the lamb and marrow bones. Bring to a boil and then lower flame and simmer for 1 1/2 hours. 2. In a separate pan saute the onion and celery in the canola oil for about 10 minutes. Then add the garlic and saute for a few more minutes. Set aside. 3. After the bones have been simmering for 1 1/2 hours add the sauteed veggies plus the rest of the ingredients including the salt and pepper and simmer for 1 1/2 more hours. |
