Fabulous Frittata Fingers |

Gorgeous spinach, mushroom, and red bell pepper frittata that is perfect for brunch! Ingredients:
12 eggs |
2 cups cottage cheese |
2 cups shredded cheddar cheese |
1/2 cup whole wheat flour |
1 tsp baking powder |
filling |
500g fresh spinach (or can use frozen spinach, thawed and drained) |
1/4 c butter |
1 medium onion |
1/2 large red pepper (or all of 1 medium pepper) |
1 cup sliced fresh mushrooms |
3/4 tsp nutmeg |
3/4 tsp. basil |
1/2 tsp salt |
1/4 tsp pepper |
Directions:
1. Mix first 5 ingredients and set aside. Coarsely chop spinach and steam until wilted. 2. Saute onion, pepper, and mushrooms. Stir in spinach, nutmeg, bail, salt, and pepper. 3. Stir vegetable mixture into egg mixture. Spread into well-greased 9x13 pan. 4. Bake at 350 for 35-40 minutes or until lightly golden and firm on top. Let cool for 15 minutes. 5. To serve, cut into 24 fingers . Serve warm or at room temperature. |
