Extra Tasty Mushroom Stroganoff |

This recipe makes a warming main course served with rice. Mushrooms and red peppers are cooked with wine, tomato paste, onion and garlic and flavored with paprika. Ingredients:
3/4 ounce dried mushroom |
2 tablespoons olive oil |
1 onion, chopped |
1 garlic clove, chopped |
1 lb mushroom, halved if large |
2 red bell peppers, halved deseeded and sliced |
3 teaspoons paprika |
salt and pepper |
1 ounce cornstarch |
1 1/4 cups vegetable stock, cold |
3 tablespoons white wine or 3 tablespoons red wine |
1 tablespoon tomato paste |
Directions:
1. Soak the dried mushrooms in 1/2 cup warm water for 20 mins the drain and reserve the soaking liquid. 2. Heat the oil in a flameproof casserole dish, add the onion and garlic and cook for 3-5 mins until softened. 3. Add the mushrooms, peppers and paprika and season with salt and pepper. Cook, stirring for 5 minutes. 4. Mix the cornstarch with the stock and add to the dish with the wine, mushroom water and tomato paste. Bring to a boil. 5. Simmer gently for 10-15 mins then taste for seasoning. Serve hot with rice. |
