Extra Tasty Mushroom Stroganoff

This recipe makes a warming main course served with rice. Mushrooms and red peppers are cooked with wine, tomato paste, onion and garlic and flavored with paprika.
Ingredients:
3/4 ounce dried mushroom
2 tablespoons olive oil
1 onion, chopped
1 garlic clove, chopped
1 lb mushroom, halved if large
2 red bell peppers, halved deseeded and sliced
3 teaspoons paprika
salt and pepper
1 ounce cornstarch
1 1/4 cups vegetable stock, cold
3 tablespoons white wine or 3 tablespoons red wine
1 tablespoon tomato paste
Directions:
1. Soak the dried mushrooms in 1/2 cup warm water for 20 mins the drain and reserve the soaking liquid.
2. Heat the oil in a flameproof casserole dish, add the onion and garlic and cook for 3-5 mins until softened.
3. Add the mushrooms, peppers and paprika and season with salt and pepper. Cook, stirring for 5 minutes.
4. Mix the cornstarch with the stock and add to the dish with the wine, mushroom water and tomato paste. Bring to a boil.
5. Simmer gently for 10-15 mins then taste for seasoning. Serve hot with rice.
