Here's a creamy mac and cheese recipe with a twist...cream cheese! Gives the dish a great consistency!!!! I've even used the flavored cream cheese (chive and onion) to change things up a bit!!! Ingredients:
1 lb elbow macaroni (or desired shape) |
3 c. milk |
1/2 c. half and half |
4 tbsp butter |
4 tbsp flour |
' 4 c. sharp white cheddar (not extra sharp!), separated |
' 1 c. muenster cheese (or similar type of cheese) |
8 oz. cream cheese |
salt and pepper to taste |
Directions:
1. Preheat oven to 400 degrees 2. Under cook pasta by 2-3 mins, strain, rinse in cool water 3. Heat milk and half and half in sauce pan 4. Melt butter in deep pan on med heat, when bubbles add flour 5. Whisk briskly for 1-2 mins 6. Slowly add heated milk, continue whisking 7. Heat until thick 8. Add a little at a time of 2 c. sharp cheddar, 1 c. muenster, 8 oz cream cheese 9. Once cheeses are melted and combined, season to taste with salt and pepper 10. Add pasta and combine 11. Place in 3 qt baking dish and top with remaining 2 c. sharp cheddar 12. Bake about 35 mins or until bubbly and cheese on top starts to brown |
