Of all places to find this recipe , in a RV travel magazine, cooking author Bob Blumer writes that an exqusite dessert can be made in a rv galley kitchen! . He sites the interesting legend of the recipe: an Alsatian chef , Jean Georges Vongerichten,was testing a flourless cake recipe, removed it too early and when cut open a warm river or rich chocloate ooozed from the center like a volcano . Read more . The chef did introduce the dessert in NYC in 1987, but another French chef states that it was already popular in France. No matter, the true origin, we are glad to have the recipe! One can search the Net for the original recipe .Note: the cake is also known as chocolate volcano, molton, or chocolate lava cake . One will find all kinds of similar recipes which supposedly stemmed from the orginal recipe which was orginally baked in a water bath Pleae note this Bob Blumers adptation of the chef's recipe famous because he does not use the select fancy chocolate the chef used in the orginal recipe and he uses less of all the other ingredients. Ingredients:
1 stick unsalted butter |
4 oz bittersweet baking chocolate |
2 egg yolks |
2 eggs |
1/4 cup sugar |
2 tsp flour |
1 tbs icing sugar |
Directions:
1. Preheat oven to 450F 2. Melt butter and chocolate in a double boiler over medium heat 3. Beat eggs and yolks and sugar until pale yellow 4. Whisk the melted chocolate and butter till smooth and then pour into the egg sugar mixture 5. Whisk mixture again till smooth 6. Add flour and whisk in a few seconds 7. Butter and lightly flour 4 dessert ramekins or coffee cups 8. Add batter just below the lips 9. Bake for 6 to 7 minutes ( yes that is correct ) 10. Remove from oven and let sit a minute or two 11. At this point cakes cake either be flipped out of their cooking vessels onto a plate or served as is 12. Finish with a light dusting pf pwder sugar 13. And if you really want to go to the extreme , served with ice cream! 14. Note: the photo of this dessert show a cooked ring of chocolate cake surrounding a by a depression of what looks like a soft uncooked choclaty center!!! |
