This yummy wholesome coleslaw can be served on its own as a light healthy meal .Made it over the weekend for a family get together ,we had a braai /barbecue :) Ingredients:
1 small cabbage |
3-4 medium sized carrots |
2-3 shallots / spring onions |
1 green pepper |
1 red pepper |
1 medium sized onion |
1 red apple |
1 green apple |
1 pineapple |
1 can whole kernels (drained) |
1 cup screw noodles |
orange juice ,lemon juice,a handful raisins,almonds,and pecans |
salad dressing |
1/2 - 3/4 cup trim mayo |
1 tsp sugar |
3 tsp vinegar |
1 tsp salt |
1 tsp ground pepper |
1 tsp mustard powder |
1 tabs olive oil |
Directions:
1. shred cabbage ,grate 2 carrots ,and juillenne the other 2 carrots 2. cube pineapple,peppers and apples into preffered sizes 3. chop shallots ,add to above ingredients 4. chop onion finely and squeeze out the juice ,add to above 5. boil noodles in salted water until al dente ,drain 6. add the cold noodles and kernels to above 7. add orange juice and lemon juice to taste 8. beat together all salad dressing ingredients ,and mix into the salad 9. lastly add raisins,toasted almonds and pecans 10. i promise you it is worth your while ! ! ! ! ! ! ! |
