This is a very creamy, fruity salad, great for entertaining. ** variations, add small amounts of either curry powder for a more Indian influence or soy sauce for Asian. Ingredients:
• 2 cups cooked chicken breast meat (cubed) |
• 1 tbsp grated white onion |
• 1/2 cup chopped celery |
• 1/2 cup chopped green pepper |
• 1/2 cup seedless green grapes cut in half |
• 2 cups pineapple chunks |
• 1 can mandarin orange slices |
• 1/2 cup sliced almonds |
• 1/4 cup sour cream |
• 1/3 cup mayonnaise |
• 1/2 tsp sea salt |
• 1/8 tsp fresh ground pepper |
• 1 tsp white vinegar |
Directions:
1. Fold in all ingredients gently, serve in a lettuce cup, with toasted croissants and honey whipped butter. |
