Ingredients:
2 cups all-purpose flour |
1 tablespoon plus 1 teaspoon baking powder |
1/4 cup sugar |
1 teaspoon salt |
1 egg, beaten |
1/2 cup orange juice |
1/2 cup orange marmalade |
2 tablespoons vegetable oil |
1/2 cup chopped pecans |
Directions:
1. Combine dry ingredients; make a well in center of mixture. Add egg, orange juice, marmalade, and oil; stir just until dry ingredients are moistened. Fold in pecans. 2. Spoon batter into greased muffin pans, filling two-thirds full. Bake at 400° for 15 minutes or until lightly browned. |
